Roasted coffee keeps releasing carbon dioxide for days after packing. Without a valve the pack swells; with a hole, oxygen gets in and the aroma fades. A one-way valve vents gas without letting air in.
A filtered valve has a layer that stops coffee dust from clogging it. Where little dust is produced, an unfiltered valve can be used.
